Afternoon Snack: Slow Cooker Spinach & Artichoke Dip!

This may be the simplest and most delicious dip you’ll ever have. It’s perfect for parties and get togethers. You throw all of the ingredients in a slow cooker & let it works it’s magic! I’m going to make this dip as a “snack” for the commercial I’m catering this weekend. It’s a hit, I promise.

I can’t even remember where I adapted this recipe from. It may have been Food Network but I’m not sure so I don’t want to step on anyone’s toes by saying it was created by the wrong person! For all of those who are trying to eat healthy-ish (this recipe might not be the best for you) I’m going to put low fat or skim options for the cheeses. Having a picnic or BBQ this weekend? Try out this delicious dip!

Slow Cooker Spinach & Artichoke Dip

Ingredients

1 cup grated part skim mozzarella
1/2 cup grated Parmesan
8 oz 1/3 less fat cream cheese
1 garlic clove, minced
1 10 oz box frozen chopped spinach, thawed
1 14 oz can artichoke hearts
salt & pepper

Preparation

Mix all ingredients in a slow cooker. Cover & cook on high for 2 hours.

Serve with pita chips, toasted baguette slices, crackers or tortilla chips. The dip really works well with everything!

An easy dish to impress your friends!
