I don’t know about you guys but I really, really love apple pie (among many other things) it’s one of my favorite desserts my Mommom makes, after her famous tiramisu of course. I love the flaky crust, the tender apples, the cinnamon-sugar, everything about it. Unfortunately I didn’t have fresh apples at my house last night, but I did have applesauce!
And I thought that there might be nothing better than an apple pie in cookie form. SO GOOD! I had no idea what I was going to end up with. I just started throwing what I had together, a lot of apple sauce, some flour, good amount of cinnamon & a nice helping of cinnamon chips. I was thrilled upon first bite when these delicious treats tasted exactly like an apple pie! It’s pretty amazing…
They’re on the fluffier side, if I had vanilla ice cream I would have made an apple pie a la mode sandwich! Oh my god, that sound ridiculous, maybe I’ll pick up some vanilla ice cream on the way home to try it out.
Apple Pie Cookies w/ Cinnamon Chips

Ingredients
1/2 c Brummel & Brown yogurt spread (butter)
1/2 c dark brown sugar
1/4 cup granulated sugar
1 egg
1 c applesauce
2 c AP flour
1/2 t baking soda
1 t baking powder
1/4 t salt
1 1/2 t cinnamon
pinch nutmeg
1/2 c cinnamon chips
2 t organic blue agave
Preparation
Preheat the oven to 350 degrees. Line a baking sheet with parchment paper.
Cream together the butter and sugars until light & fluffy. Add the egg and applesauce and mix until combined.
Next add in the flour, baking soda, baking powder, salt, cinnamon & nutmeg, mix until all is combined.
Lastly fold in the cinnamon chips and agave.
In helpings of 2 tablespoons place 8 cookies at a time on the parchment lined baking sheet. Bake for 12 minutes.
Remove from the oven & let rest for 5 minutes then move to rack to finish cooling.
When cool feel free to add icing if you’d like.
They’re great either way!
Makes 28 cookies.

These look delicious – I hate being allergic to cinnamon! I’m wondering – the agave added at the end? Is there a reason it’s not added with …say…the eggs or with the sugar? I’ve never worked with it and was curious. Thanks!
Oh man I don’t know what I would do without my cinnamon, that’s terrible! Honestly, I tasted the batter and I thought it needed a little something extra to sweeten it up so I threw it in at the end. It’s almost the same as honey, not nearly as sticky. No reason other than that’s where i put it in and they came out so well I didn’t want to change anything. ha! I’m sure it’s fine with the other wet ingredients.
