Do you guys remember the Hostess Mini Muffins? I used to eat a bag of those adorable little muffins every morning when I was younger! Oh wait…I’m being told that they’re still around, apparently in my mind these were around just in my childhood. Well regardless, I got a craving the other night and although these did not taste exactly like the sugary processed muffins w/ some randomly crunchy blueberries that come in a plastic bag , believe it or not, these were even better!
So good! I love making mini muffins and cupcakes, just because they’re too cute. My downfall is that I think its ok to eat more when they’re mini. I figure there was at least 5 in the Hostess Mini Muffins right?? What’s another couple hours in the gym anyway? These were well worth the extra workout!
Blueberry Muffin Minis
2 1/2 cups AP flour
3 teaspoons baking powder
1/3 cup sugar
2 eggs, lightly beaten
1 cup skim milk
4 Tablespoons butter
4 oz blueberries
2 Tablespoons sugar in the raw
Preheat oven to 375.
Sift flour & baking powder together into a bowl, add sugar & mix to combine.
Combine eggs milk & butter. Add egg mixture to dry ingredients until just combined then fold in blueberries.
Spoon mixture into greased mini muffin tins. Sprinkle with Sugar in the Raw and bake for about 12-15 minutes or until muffins are cooked when tested with a skewer. Turn onto wire racks to cool.
