Skinny Pizza Rolls

It’s moving day!! Hallelujah! I have to admit, I’m a bit stressed. It’s a lot of change, but I’m excited for it at the same time. I’m moving out of Manhattan, which is a bit scary, I love being in the thick of the city. But I’m moving into a really hip neighborhood in Brooklyn called Williamsburg. No I’m not a hipster, for those who know the area. It’s nice, regardless of what the residents choose to wear or how they like to go with the I haven’t showered in a week look. I kind of like it! 🙂

Doesn’t mean I’ll be going that fashion route but I’m not hating! My roommate in college was very similar and I love her and her style to death. Anyway…I’m finally moving into an apartment with a full stove, full refrigerator, dishwasher, etc. Yesss!!!

So in light of my awesome new kitchen (pictures to come), I’m going to have a little Super Bowl get together. More often than not that means some sort of super fatty indulgences, from apps, to entrees, to desserts and everything in between. Well this recipe doesn’t fall into the “fatty” categorie. This is actually a “skinny” appetizer that everyone will love. I mean, it is pizza bites after all. It’s got all of the essential ingredients, sauce, cheese, and my favorite, pepperoni. Mmmm.

Skinny Pizza Rolls
adapted from Just a Pinch (Katie Fairless)

1/2 cup mozzarella cheese
1/2 cup pizza sauce
1/2 teaspoon garlic powder
1/2 teaspoon dried parsley
1/4 teaspoon dried basil
1/8 teaspoon dried oregano
20 slices turkey pepperoni, quartered
24 wonton wrappers
2 tablespoons parmesan cheese

Preheat oven to 450 degrees. Prepare a large baking sheet with parchment paper coated with non-stick cooking spray.

In a bowl, add sauce, seasonings, pepperoni and mozzarella cheese.

Fill the wonton wrappers by placing about 2 teaspoons of filling in the center of each wrapper. You could use a little more or less, just try not to over-fill them, or the filling will ooze out the sides when you are baking them.

To seal them shut, place finger in water, trace one corner & adjacent sides of wonton wrapper and fold the wrapper in half. Press to seal the two sides together. Lay out on prepared baking sheet.

When all wrappers are filled, spray them lightly with non-stick cooking spray then sprinkle parmesan cheese over top. Bake for 10-15 minutes, or until golden brown. Serve warm!

Try to ignore the greasy napkin, we're living out of boxes and the grease is just non stick cooking spray!

At first I thought, “Sacrilege!” I don’t think healthy when I eat a few things, and one of those things is pizza. Then I saw those wonton wrappers, and now I have to try this recipe. Thank you!

I know! I think if I did them again I might use a stick of pepperoni (regular not turkey), cut into small cubes. I’m pepperoni obsessed!

Oh my gosh, take me right back to my childhood. I used to L.O.V.E. pizza rolls. I’m going to crave them now. YUM!

Me too Cassie! I used to eat those Totono’s pizza rolls every day. So good!
