I’ve said it once & I’ll say it again…Woohooooo Giants! Ok now that that’s out there. This is one of my favorite dips. It’s so simple to make and goes in minutes. It’s perfect for a man party, although all of the women love it in my family. Guys seem to tear into this stuff…
I have to admit that I love refried beans, and with it being the bottom layer of this dip I try to scrounge up as much of the beans as I can. Which means that I always have a heaping mound of dip on my itty bitty tortilla chip.
I made this a bit early on Sunday, about an hour before the game started when just my handsome man and one friend were hanging out, watching the pregame nonsense. I look over about 15 minutes later to find most of the dip had been eaten. Basically everything but the smudges of refried beans on the bottom of the glass pan that they apparently didn’t appreciate as much as me! The dip was removed long before the Giants clinched the Super Bowl and well before the other guests had arrived. At least I know they liked it!
3 Ingredient Bean Dip
a recipe my mom used to make
1 15.4 ounce can fat free refried beans
1 jar of salsa (I go with medium but spice level is up to you!)
1 package shredded pepper jack and cheddar cheese nix (could use any combo – go for a white & orange)
1 bag Tostitos
1 small container of sour cream for extra dippage
Preheat the oven to 425.
Layer the bottom of a baking pan (glass or metal) with the refried beans. Then top with your salsa, I usually don’t use the whole jar but most of it. Then top it off with the package of shredded cheese.
Pop it in to the oven and cook until cheese is completely melted and bubbly, about 10-15 minutes. Let cool for about 5 minutes and serve with Tostitos & a side of sour cream.
